Shrimp and Mix Vegetable Salad

For 2 persons


  • 200 g cherry tomato, cut half
  • 120 g carrot, peeled and shredded
  • 120 g yellow bell pepper, diced
  • 1/2 red onion, diced
  • 1/2 lbs asparagus, diced
  • 1 lbs shrimp
  • 2 tablespoons olive oil
  • Your favorite chili powder of PepperukoHK, 1 tablespoon (more or less to taste)
  • 1 teaspoon fresh oregano, to taste
  • Salt, to taste
  • Pepper, to taste
  • Lime juice, to taste
  • 1 large handful mixed greens

To prepare the salad dressing

  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Your favorite chili powder of Pepperuko, ½ teaspoon (more or less to taste)
  • Salt, to taste
  • Pepper, to taste

…All mix together


Preheat oven to 200˚C

Toss olive oil, chili powder, salt, pepper, oregano, lime juice and vegetable except the greens.

Add vegetables to a baking sheet lined with parchment paper, baked for 10 mins.

Move vegetable to the side to make space in the center of the baking sheet and add shrimp in a single layer, baked for 5-8 mins. Make sure the shrimp is fully cooked.

In a large salad bowl, combine mixed greens, roasted shrimp, vegetable and the salad dressing together.


TIPS: Can use salmon instead of shrimp.
